Authentic and Cheap Asian Market

Through friends I found a very authentic Asian Market today that has a great variety of authentic Asian foods directly imported from Asian: vietnam, thailand, Malaysia, China and some latino foods also. Best prices on bulk rice I have ever seen. Very good stuff. Not super clean like a Korean market, but great prices. Run by Vietnamese people.

Morning Chow: Eggs done right

My morning meals have been abismal lately waking up so early I can not force myself to eat. Also after having an incredibly bland salmon omelette least week at a local waterfront diner I got down right pissed off. You could tell that this cafe was dying from a lack of passion for good food. I realized I could make an omelette better than the experienced chef behind the grill. Sad breakfast...these are the moments when you realize your own personal skill as a chef. I remember my folks raving about my omelette just 2 weeks ago. It was honestly really good. The same went for the 12 ingredient gourmet salad that I made for them that they polished off in 2 days. They dislike salad by the way....so I was impressed. I must have done something right.
   That said, ever since last weekends lackluster breakfast my mind has been ruminating on how to cook awesome omelettes that will blow people over.
My goal is to learn cook great food really fast and efficiently. Having great, hot and healthy food is just a big part of life. I'm going to post some of my musings on this subject: Fast, Good, Efficient Food Tips

Here is a recipe to start that is a twist on plain Jane omelettes.

Tortilla and Egg Recipe

3-4 servings

6-8 eggs 1/2 cup ham or luncheon meat diced 1/2 cup cheddar cheese diced or shredded one large flour tortilla or three small corn tortillas cut into one inch by 1/2 inch strips (uncooked) one garlic clove crushed 1/2 onion diced 1/2 tsp salt

Scramble the eggs in a large bowl.

Add the tortilla strips and stir until well coated.

Add meat, cheese, salt, garlic, onion, and tomato.

Stir well.

Cook in a frying pan over a medium heat until the mixture congeals into a moderately dry "hash-like" substance (or to your taste.

Season to taste with salt, pepper, salsa, ketchup.

I highly recommend Peach Salsa with eggs, not hot at all, but gives eggs a fruity, sweet flavor bursting in your mouth. Really makes eggs POP!
